Chinese dish/Caribbean food/Hakka dish?
Dear Clem,
I forgot to tell you about the Chinese dish my Hakka mom taught me. In
Trinidad, we call it souse. It's made with pig feet, limes, onion, garlic,
vinegar, salt and cucumber.
My friends who speak Cantonese and are from China, told me they have a
similar dish in China. You have to cook the pig feet in boiling water for
one or two hours until soft and well cooked. Wash it thoroughly, and soak
it in salt water for a few days, with lime juice, add some vinegar, salt,
fresh minced garlic, sliced cucumbers and onions. Marinade it in the fridge
for 3 or 4 days, and when you eat this stuff, it tastes really nice. You
can call it pickled pig feet with cucumbers and onion. Do Hakka people in
China and elsewhere eat this?
Henri.
