Infrared shows flat pan(enamel or non enamel)can keep heat better than a wok, some wok has flat bottom but not good enough, infrared shows the wok temperature drops dramatically once food is put into the wok to cook, while flat pan can keep up the heat and temperature can even climb.
Reason being the wok is bigger than a pan but has less surface contact with the flame so heat is dissipated very quickly while regular pan has more surface contact with the flame or heating coil unit.
Do not buy any wok unless you have industrial strength gas line in your kitchen to give it a big flame.
if you really need to buy a wok, buy a lager pan instead.
