Simple old school receipe...
Medium size roaster 3-5 lbs.
Salt, pepper, garlic, trarragon, olive oil, ultrafine ground habanero, bay leaves
Clean out the bird and heavily salt the interior with a generous amount of salt to hold the fluids close to the bones. Stuff about 12 bay leaves inside the carcass
Take a coarser grain salt and a fresh cracjked pepper and generously rub exterior of bird. Next, cut your tarragon well and rub it over the salt and pepper along with the garlic. Use alot.
slather a generous coating of olive oil over the bird.
The lightly sprinkle with the ultra-fine habanero powder (becareful, this stuff can fool you).
Stick it in a 375 oven for for 90 minutes (covered with foil). Turn your oven down for 30 minutes to 300. Now crank up to an intense broil seting and remove the foil for the last 5-10 minutes.
Skin should be crisp and the meat should pull from the bones.
Very simple...not fancy, but a nice meal. I find it goes well wit bitter mellon in black bean sausce.
