Genetic recombination has been occurring in nature without human intervention for as long as the biological world coming into existence. There is no difference between the products of artificial insemination/pollination and GM to breed a new variety of apple, dog, peach, etc. Many of the varieties of genetic recombination such as nectarine have been consumed for decades without any abberative effect in humans.
In addition, when foods are digested, the genetic components are also disintegrated to the basic building blocks and assimilated with our own body composition.
There is nothing to worry about GM on quality and quantity improvement of our food sources. We do have to worry about the commercial monopoly using a combination of pesticide resistant gene to wipe out wild types in order to propagate the GM strain for profit.
Vaccine research would be a lot more risky in accidentally releasing virulent pathogens.
Enzymes are natural catalysts of many kinds, each specific to conduct a biochemical reaction at ambient temperature. Don't take those commercial jargons seriously. Read only the reliable scientific sources.
I am a professor and enzymologist by profession.
